Parmesan Cheese and Garlic Bread Twists


Here is the breadstick recipe I used for Festivus, I got the recipe from a friend. (It is not what is pictured above, but looks simmilar.)

1 1/2 c. warm water
1 T yeast
1 1/2 T honey
1 T malted milk powder
1 tsp salt
4 1/2 c. flour
1 stick butter
3 T Parmesan cheese
1/4 tsp garlic powder
  1. Preheat oven to 400 degrees.
  2. Combine yeast and warm water first. Let sit for a few minutes until yeast foams.
  3. Pour yeast in mixing bowl and add the honey, malted milk powder, and the salt.
  4. Gradually add flour little at a time (maybe a cup at a time) until it turns to dough. Make sure dough isn't very sticky.
  5. Let dough rise for 30-60 min.
  6. While dough is rising make the spread with the butter, parmesan, and garlic powder.
  7. Roll out dough, rub melted butter all over and pour Parmesan on it. Then slice and twist into breadsticks. Place on pan, let rise for another 30-60 min.
  8. Bake 12-15 min. When finished, apply spread all over.

PuMpKiN cAkE!

Ingredients:
One Cake mix- (I used yellow)
1 -15 ounce can pumpkin filling

Directions:
Preheat oven to 350°. In a large bowl mix cake mix with pumpkin filling using a hand mixer or a stand mixer. Beat on medium for 2 minutes. Pour batter into a greased 7 x 11 inch baking dish. Bake for 28 minutes or until tooth pick comes out clean. Cool completely before frosting. Serves 8.

White chocolate and macadamia nut pumpkin cookies!

Here is the recipe for white chocolate and macadamia nut cookies! Enjoy!


Ingredients:

1 cup canned pumpkin
1 cup white sugar
1/2 cup vegetable oil
1 egg
2 cup all-purpose flour
2 tea baking powder
2 tea cinnamon
1 tea nutmeg
1/2 tea salt
1 tea milk
1 tea baking soda
1 Tablespoon vanilla extract
2 cup semi-sweet milk chocolate or white chocolate
1/2 cup chopped walnuts or macadamia nuts

Directions:
1. Combine pumpkin, sugar, vegetable oil, egg
2. In a separate bowl, combine flour, baking powder, cinnamon, salt, nutmeg.
3. Dissolve baking soda in milk and stir in.
4. Add flour mixture to pumpkin and mix well.
5. Add vanilla, chocolate chips, nuts.
6. Spoon onto greased cookie sheet and bake for 10 min or until slightly brown.

CaKe PoPs makes approx. 45-50

1 box cake mix, cooked according to directions for 9x13 pan
2/3 can cream cheese frosting
chocolate, white chocolate, or almond bark
wax paper, lollipop sticks

1. After cake is cooked and cooled completely, crumble cake in large bowl. (I recommend crumbling 1/4 of the cake at a time)

2. Mix frosting into crumbled cake. Roll mixture into quarter-size balls and lay on cookie sheet. Chill for 1 hour in freezer.

3. Melt chocolate. Stick lollipop sticks into cake balls.

4. Roll balls in chocolate and lay on wax paper until firm. Decorate as desired.

Alright everybody! We have a blog. Make sure to post all of the recipes we've had so far and we can go from there! I guess we should talk about whether or not we want to post only recipes we've done for recipe night or others as well...what do we think?

Also, if you have any food blogs you follow, let me know and I'll put them up on our blog list.

Another quick note: I think it will be easier to go back and find recipes later if we all use the labels for our posts. That way if we want to refer to the blog for a certain type of recipe (side dish, dessert, soup, etc.) it will be easier to find. So, yeah, use those.

Finally, I think it would be cool if we had pictures of our own incarnations of the recipes. So when you make something, take some snapshots for your post! I also think it would be fun if we post pictures from each of our recipe get-togethers. Yeah?

Boyd's Salsa Fresca

Ingredients
:
  • 2 medium sized yellow onions, chopped
  • 2 fire roasted bell peppers (1 green, 1 red), chopped
  • 2 fire roasted jalapenos, chopped
  • Juice of one lemon and one lime
  • 10 medium sized tomatoes with seeds removed, chopped
  • 2 ears of white corn, microwaved and chopped
  • 1 cup of cilantro, chopped
  • 1 can of black beans, rinsed & strained
  • 1 1/2 - 2 tsp of chili powder
  • 1 tsp of lemon pepper
  • 1 tsp of paprika
  • 1/2 tsp of black pepper (freshly ground if possible)
  • 1 tbsp of crushed dry parsley
  • 1 tsp of garlic salt (add more to taste)
  • 2 tbsp of red taco sauce (optional)
  • 1/2 tsp of jalepeno tobasco sauce
  • 1/2 cup of beer (can be non-alcoholic of course) (optional)
  • Any hot sauce to taste (to add extra flavor)


Tips & Tricks:
  • When handling jalapenos, wear gloves or be very careful not to touch your face for 5 hours regardless of hand washing
  • Use cold onions for less tears
  • When adding lemon & lime juice, use the pulp as well as the juice for extra bursts of citrus flavor
  • After fire roasting the peppers (on a gas stove works best), you can rinse some of the blistering off for a less roasted flavor of salsa
  • Microwave corn inside of husk or paper towel on medium for 4 minutes each
  • Add salt to taste, but remember the chips are already salty
  • When removing seeds from tomatoes, you can cut them in half & rinse them out using your finger to help under cold water
  • To keep non-tomato ingredients fresh while chopping tomatoes, add the lemon and lime juice and mix
  • Absolutely NO food processors allowed! The salsa gods will strike you down
